Uses: Create fantastic desserts and pastries fragranced with cloves, cakes, cookies, melomakarona, brioches and tarts as well as compotes and syrups. In cooking, cloves are ideal with strong tomato salads and wines, casserole dishes, stifado and baked fish. Cloves enrich the flavour of pickles.
Combinations: Combined with allspice, cardamom, chilli, coriander, cumin, star anise, ginger, nutmeg and turmeric.
