Description: The dried fruit of a tree from Southwest China, which have a star shape. Star anise has an intense flavour, reminiscent of liquorice, which slightly numbs the mouth, stimulating the palate. The star anise fruits are available whole.
Uses: Used to strengthen the flavour of poultry and pork, soups and stocks. In pastry, it adds aroma to cakes, biscuits and homemade ice cream.
Combinations: Combined with cinnamon, chilli, coriander, ginger and garlic.
