Uses: It blends perfectly with Mediterranean cuisine and for this reason is used in many olive-oil based dishes, such as stuffed vegetables and green beans, as well as with soups, pulses and, of course, fish and meat. Finely chopped, it gives a different flavour to omelettes, pasta dishes, rice, pies, sauces, salads and dressings. It has countless gastronomic uses, from the Greek parsley salad to the Italian aglio e olio.
